Carpets occupies a historic workshop in the heart of Signagi, where the architecture still honors the rhythm of traditional weaving. We have preserved the original timber and exposed brick to create a sanctuary from the rush of mainstream "fast" tourism. While much of Signagi Georgia dining has shifted toward the generic, we prioritize the slow, intentional ritual of the Georgian table. Our hospitality is rooted in a direct line to the land: our lamb comes from our family sheep farm, and our house wines are served "plant-to-glass" from our private cellar. This is our definition of a traditional Georgian restaurant—a place where the connection between the producer and the guest remains unbroken.

Your evening begins with a guided tasting of our family’s private-label wines and oak-aged Chacha, followed by a table laden with the region’s most iconic dishes. The night is led by a Tamada (toastmaster), who serves as your guide through the ancient ritual of storytelling, philosophy, and toasts that define the Georgian table. Most of our family-produced Rkatsiteli and Saperavi never reaches a bottle; it stays in our private cellar, shared exclusively with guests here at Carpets. Alongside our house vintages and oak-aged Chacha, we feature hand-picked labels from trusted local neighbors, including refined Kakhetian Mtsvane, elegant Tsinandali, and structured Mukuzani.
